I have three weaknesses when it comes to ordering cocktails:: ginger beer, rosemary, and champagne (…not together).
If I spot a French 75 or bellini, game over. I don’t even have to tell you about mimosas at brunch (unless there’s a build-your-own-bloody-mary bar, but another story, another day).
I was on the hunt for a champagne cocktail to make for Valentine’s Day, and we had all of the ingredients for a Champagne Bowler here already, so this turned into a fun little snow-day-happy-hour treat…!

champagne bowler from champagne cocktails by a.j. rathbun
serves two
[ ingredients ]
6 or 7 strawberries
2 oz simple syrup
ice cubes
2 oz white wine
1 oz cognac
8 oz chilled brut sparkling wine
[ directions ]
1. place the strawberries and simple syrup within your finest cocktail shaker. using a muddler, sturdy wooden spoon, or mini umbrella, muddle well.
2. fill the cocktail shaker halfway with ice cubes. add the white wine and cognac and shake well.
3. strain the mixture into two goblets or, if no goblets are lying around, red wine glasses. top each with 4 ounces of the sparkling wine, stir briefly, and serve with a slight nod.
